By not upgrading to stronger brakes to compensate for the stronger engine, and by not pulling over the second they realized the accelerator was sticking and/or they could smell the brakepads disintegrating.

He was actually riding the brakes because the engine idled powerfully enough to go like 30mph, and most likely boiled the brake fluid so no pressure. Really really dumb behavior. Uncle Tony's Garage did a video on it.
