regarding history, most traditional food's origins are from natives or slaves and they had to prepare what they could with the parts of the animals that spaniards didn't use, like the cow's heart, lungs, tail, stomachs, etc. or andean ingredients such as quinoa, avocado, herbs, etc. They were considered "poor people's" food, until many years later after the 90's, it was considered a delicacy once again and some chefs elevated their status.

Objectively speaking, Peruvian pisco is better due to the quality of the soil, the altitude and dryness of the ground where it was originated. The word "pisco" (pishcu means bird in a native old language) is the name of a valley that a spaniard lord owned where you could see many birds flying all the time and the ground was perfect for grapes. There is no "pisco" province in chile. Chilean pisco is too strong on the alcohol because it's grapes cannot produce the necessary sweetness that you get during the fermentation process.

It is indeed not Chinese (I personally travelled to China and nobody sold Chaufa rice anywhere in China) but a dish created by Chinese migrants (called Culis, chinese brought to do heavy labor work during the colonial period) with peruvian ingredients and seasonings. It is a fusion dish and although it was created by chinese migrants, it is considered peruvian it was created here.

believe it or not, we don't use tortillas as mexicans do. just because we both speak spanish doesnt mean we have the same traditional ingredients, but we do use a lot of paprika, lemons, rice and beans

investing in food is a challenge now since there are many restaurants that have already fragmented the market, but you can never go wrong with it if you have a good strategy and a good local chef that knows his stuff. It's hard for a foreigner to prepare this food, you would need local experience but it is possible as long as you maintain the real flavors and innovate just a bit to stand out but not too much to enfuriate peruavians for ruining their food (we are very proud of our food...)

You won't find real Chinese food there. If it is Peruvian-Chinese, you will most likely have food that has a great deal of onions, chicken and salty/spicy elements. No dog or cat ingredients there. We don't eat dogs here like real Chinese.

I've never owned a restaurant or food service company before and the left here would savagely harass me if I (a white American man) tried to pass off authentic Peruvian cuisine as my own.
