Which one? There’s like 5 different Chinese language families (not counting the mongol or turkoids), none of which are mutually intelligible and each one will take a decade to become fluent. Also each city and region will have its own dialects.

Japanese grammar is harder. Japanese has honorifics. Japanese has verb tenses. Japan has more particles. I speak Mandarin as a second language and I find Japanese very difficult. I also find Thai to be very dumb.
